Spiced Walnut Millet

Millet an ancient grain is astringent and warming increasing digestive fire. Aids digestion as it is binding but for sensitive bodies it maybe too dry. Add a tsp. of ghee based on your Dosha.

Cardamom’s warming and detoxifying effects aid in reducing the accumulation of Ama (toxins) in the body and maintaining health. It is a spice that balances all three Doshas.

Saffron has antioxidants that boost immunity, anti-inflammatory and anti-fungal properties.

Serves 3

Ingredients

2 cups Unsweetened Almond Milk

2 cups Water

1/2 cup Millet (soaked, uncooked)

1 tbsp Maple Syrup

1 tsp Cardamom

1/3 cup Walnuts (soaked and broken)

1/2 tsp Saffron

2 tbsps Coconut Sugar

1 tbsp Goji Berries (Soaked )

Soak the millet for at least 30 minutes or overnight. In separate bowls soak the walnuts and goji berries. Combine the water, millet, and half of the almond milk. Add spices and cook in a large pot over medium-high heat. Bring to a gentle boil then reduce the heat to low and cover the pot with a lid. Let it simmer for 25 to 30 minutes, or until the millet is soft and your desired consistency is reached. Then add the coconut sugar and the remaining milk and the walnuts. Cook another 5 minutes. Be sure to stir occasionally. Remove from the heat and stir in the Gojji berries. Divide between bowls and drizzle the maple syrup. Enjoy!
