Cooling Summer Chutney

Chutneys provide the punch and balance to any meal. This chutney has the sweet, sour, pungent, and salty taste well covered to balance a summer meal.

Ayurveda considers coriander both a warming and cooling herb. Coriander helps the body to get rid of excess heat and toxins. It detoxifies the body and keeps the body cool and fresh. It soothes the digestive tract, and fights inflammation.

In Ayurveda, this herb is often associated with freshness and taste. Mint leaves are very effective in digestive health as they pacifies all doshas especially pitta and treat respiratory disorders. Mint has the ability to relax the muscles surrounding the intestine and thus act as an effective cure for several symptoms of irritable bowel syndrome like indigestion and dyspepsia.

Ingredients

1 bunch Coriander

1 bunch Mint Leaves

1/2 Lime (Juiced)

1 Lemon (Juiced)

1/2 tsp Salt Himalayan

1/2 tsp Sugar

1 Spring Onion (dice with the greens)

1/2 Green Chili Pepper (chopped and de seeded (optional))

1 Apple (small - diced)


In a high speed blender pour the lemon and lime juice add salt & sugar, green chilies and green onion and the apple. Blend till the mixture is well combined.

Now add the washed leaves & stems of coriander and mint. Blend until the mixture is smooth. Store in a glass jar. This should keep for at least 1 week.

Use as a sandwich spread, with Kitchari or in a yogurt drink. Enjoy!
