Cabbage is a cruciferous vegetable that has a substance called indole which helps modulate estrogens and has an anti cancer effect. High in fibre and antioxidants. Bean sprouts have phytoestrogens that can help balance your hormones naturally.
Serves 2
1 tbsp Avocado Oil
1/2 Yellow Onion (medium, diced)
2 1/2 stalks Green Onion (cut on a slant)
2 Garlic (cloves, minced)
1 1/2 tsp. Ginger (peeled and grated)
3 cups shredded Savoy Cabbage
1 cup Bean Sprouts 2 tbsps
Coconut Aminos or Tamari
Heat the avocado oil in a pan over medium-high heat. Add the yellow onion, garlic, and ginger.
Cook for 3 to 5 minutes, stirring frequently, until soft.
Stir in the cabbage, bean sprouts, and coconut aminos. Stir for 5 minutes, or until veggies have softened. Add the green onions and other toppings.Transfer to bowls and enjoy!
Toppings: Add blanched, julienned carrots and shredded radicchio.
