Beet & Orange Salad

Beets and oranges are a good combination for moving the lymph and providing the body with phytonutrients. The Lymphatic system moves with citrus fruits. They help hydration and assist in carrying antioxidants to clean out the clogged glands. Beets are alkaline and also support lymph health by serving as a cleansing medium.

Yields : 6 servings

3 Beetroot (medium sized)

4 Navel Orange (Peeled and segmented)

1/4 cup Pumpkin Seeds (roasted)

3 tbsps Extra Virgin Olive Oil

1 tbsp Walnut Oil

1 tbsp Balsamic Vinegar

3 stalks Green Onion (Snipped at an angle)

Boil the beets in salted water. Once cooked

peel and cut into julienned strips. Segment

the oranges and set aside. For the Dressing:

Mix the olive oil, walnut oil, balsamic vinegar

and salt and pepper. Plate the salad and

drizzle the dressing. Garnish with green onions and roasted pumpkin seeds.
