Edamame Poriyals

Poriyals are an easy way to incorporate vegetables into your diet. They are light and cooked quickly to retain their nutrient value. An easy way to incorporate all 6 tastes to for good digestive balance. Serves 4

Ingredients

2 cups Frozen Edamame Or Lima Beans

1 tsp Black Mustard Seeds


1 Whole Dried Red Chili


8 Curry Leaves


1 tbsp Coconut Oil (Or Ghee)


1/8 tsp White Pepper


Himalayan Salt (to taste)


1 tbsp Unsweetened Shredded Coconut


1/2 Lime (juiced)


1 tsp Yellow Split Peas


1 tbsp Roasted Peanuts

Remove the beans from the package and pour hot water. Drain. In a frying pan, add the coconut oil and heat. Add the mustard seeds, split pea, red chilies until they splutter. Then add the curry leaves and the vegetables.Add a sprinkle of water and let the vegetables cook until they soften slightly but retain the colour. This should be about 4 to 5 minutes. Season with salt and white pepper. Squeeze the lime juice all over the dish and garnish with roasted peanuts and shredded coconut.
