Beet & Grape Soup

The simple beetroot is anti-inflammatory, high in anti oxidants, good for heart health and in Ayurvedic medicine used to treat Anaemia and liver toxicity and for treating Irritability and restlessness. Add to that the freshness of lime and alkaline coconut and grapes and you have a good combination for moving the lymph and providing the body with phytonutrients. Grapes help hydration and assist in carrying antioxidants to clean out the clogged glands. Beets are alkaline and also support lymph health by serving as a cleansing medium.Grapes contain anti-oxidants such as resveratrol, that is anti inflammatory.

Serves 4

2 Beetroot (medium sized peeled and diced approx. 300 gm.)

1 cup Red Grapes (or a small bunch seedless)

4 stalks Celery (diced)

1 tsp Ginger (Diced a thumb sized piece)

4 Black Peppercorns

1/2 Lime (juiced)

1/2 cup Plain Coconut Milk (or to taste)

3 cups Water (600 ml cover the veggies by a finger width)

Salt Himalayan (to taste)

Wash the grapes, remove the strings from the celery and dice. In a heavy bottomed pot add a 1/4 cup of water and add the diced celery and black peppercorns.

Add the beets, ginger and the water and cook for at least 25 minutes. Then add the grapes. Cook another 15 minutes.

Using a hand blender carefully puree the soup in the pot. Return to heat and slowly add the lime juice and coconut milk. Season with salt and pepper to taste. Enjoy the lasting warmth created by this soup.
