Creamy Savoury Oatmeal

Cashews are one of the lowest-fibre nuts, but are packed with vitamins, mineral and antioxidants. These include vitamins E, K, and B6, along with minerals like copper, phosphorus, zinc, magnesium, iron, and selenium, all of which are important for good bodily function and supporting your thyroid.

Mustard seeds are pungent in taste, have selenium which is a mineral really good

for bones, teeth and nails. They are also rich in Zinc and calcium. They are also a

good anti-oxidant and anti-inflamatory.

Serves 2

Ingredients

1 cup Rolled Oats

1Carrot finely diced)

1Green Onion (finely diced white part/ save green for later)

1 1/2 cups Water (Or vegetable broth)

1/2 cup Organic Coconut Milk

1/2 cup Green Beans (Finely cut)

5 Curry Leaves

1 tsp Black Mustard Seeds

1 1/2 tsps.Coconut Oil

1/2 Lime (Cut in wedges)

1/2 tsp Sea Salt & Black Pepper (Or to taste)

1/2 cup Cashews (Or two handfuls)

Directions

Warm one tbsp of the oil and sauté the diced white part of the green onion for about two minutes. Add the oats and roast for a couple of minutes. Add the water or broth and the coconut milk and let simmer for about 5 to 7 minutes. I have sometimes used a vegetable broth or coconut milk instead of water. Please add liquid according to the consistency you want.

In a separate pan add the 1/2 tbsp of the oil. Cook the mustard seeds and curry leaves and the cashews.

Add the green onions to the oatmeal and the fried mustard seeds, cashews and curry leaves as a garnish. Finally squeeze the lime and serve.
