Oats Kheer w/ Apples & Cashews
Oatmeal can lower blood sugar and cholesterol levels, protect intestinal flora and thus prevent cancer.Any food is said to be medicinal when it ignites the digestive fire, Agni. and balances the constitutions oatmeal is one such food that helps balance Vata, Pitta and Kapha Doshas if prepared correctly. For Vata keep the recipes as follows, for Pitta reduce the spice amounts, for kapha reduce the ghee and increase ginger.

Ingredients
1 tsp Ghee
1/4 cup Rolled Oats
1 1/4 cups Oat Milk (plain, unsweetened)
1/8 tsp Saffron (or a few threads)
Himalayan Salt (a pinch)
1/4 tsp Ginger
2 Pitted Dates
1/8 tsp Cardamom (ground)
1 Apple (small,divided 1/2 grated 1/2 finely diced)
1 tbsp Cashews (chopped)
1 tsp Maple Syrup (Optional)
Directions
Boil the oats in the milk with the pinch of salt and diced and apples for a few minutes, turn off the heat then let the oats soak for 15 minutes. Warm again grated apples, saffron, ginger and chopped dates. Cook for 3 minutes add ghee.
Serve warm. Top with cashews, maple syrup and enjoy!
