Sweet Potatoes
Sweet potatoes are rich in complex carbohydrates. Beta carotene a precursor for Vitamin A is readily available for easier absorption. And pacifies Pitta which is extremely beneficial in the summer.
Despite the name "sweet," it may be a beneficial food for diabetics . They are lower in the glycemic index score. This makes them slower to digest. According to Ayurveda they are good for all Doshas.
Sweet potatoes are part of the morning glory family and are a tonic for the spleen, strengthen the liver, satisfy the stomach, support circulation and eye health. They are rich in Vitamin C, Potassium, Magnesium Vitamin B5, B3 and B6 .
Ingredients
2 Sweet Potato (Purple)
Himalayan Salt (to taste)
1/2 Lemon (Juiced)
Directions
Heat the oven to 200 degrees C. Roast the sweet potato for about 25 minutes or a bit longer. Cool and peel the skin.
Cut the sweet potato into small rounds and season with himalayan salt and lemon juice.
