Chocolate Blueberry Walnut Cups
Happy New Year! May 2024 bring great richness of all the tastes. Dark chocolate warms the heart and the abdomen while the Flavanols improve mood. Dark chocolate also provides the much needed bitter taste and are known as the opposite of the sweet taste. Eating bitter foods helps curb cravings. This is best for Kapha but as dark chocolate is stimulating and has caffeine it may aggravate Pitta and Vata. For Vata dosha it is best to add a natural sweetener.
Ingredients
1 tbsp Coconut Oil
227 grams Dark Chocolate (coarsely chopped)
1 tsp Cinnamon
1/2 cup Blueberries
2 tbs Walnuts (finely chopped)
Directions
Line a muffin tray with liners or use a silicone muffin tray.
In a saucepan over low heat, melt the coconut oil and chocolate, continuously stirring. Remove from the heat and stir in the cinnamon.
Divide the chocolate mixture between the muffin cups. Top each with equal amounts of blueberries and walnuts, gently pressing them into the chocolate.
Chill in the fridge for at least 30 minutes. Enjoy!
