Almond Chocolate Chip Cookies
Favourite cookies not completely healthy !!! When the children return home from college for the summer. These are a must have.
Serves 36
Ingredients
200 grams Butter
200 grams Coconut Sugar
2 Egg
200 grams Almond Flour
150 grams Whole Wheat Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Sea Salt
200 grams Dark Chocolate Chips (Or chopped chocolate pieces )
Directions.
Pre heat the oven to 180 degrees C. And line a baking tray with baking paper.
Mix all the dry ingredients. Sift them together. In a separate bowl cream together butter and sugar until combined.
Now add the eggs and vanilla extract until fluffy. Gently fold in the dry ingredients without over beating them. Add the chocolate chips and mix well. You can add more if you wish.
With a Tbsp. measure out the mixture and roll into small balls and place equal distant on the baking tray. With plenty of space between the cookies. I also found refrigerating the dough for 15 minutes helps form the cookies better.
Bake in the oven for 8-10 minutes. Remove from oven and transfer to a cooling rack after a few minutes once the cookies are slightly hardened.
