Homemade Granola w/Spices
Homemade granola is an easy “go to” healthy breakfast and snack.
The addition of spices brings you additional health benefits and flavour.
Serves 12
Ingredients
1/3 cup Coconut Oil ( Or 6 Tbsp melted)
1/3 cup Maple Syrup (Or 6 Tbsp)
500 grams Oats (Or 4 cups rolled )
1/2 cup Almonds (Or two handfuls)
3 tbsp Pumpkin Seeds
2 tbsp Sunflower Seeds
8 Pitted Dates (Chopped)
3 tbsp Dried Unsweetened Cranberries
1 1/2 tsp Cinnamon
1 tsp Fennel Seed
1/2 tsp Himalayan Salt
1/2 tsp Ground Ginger
Directions.
Preheat the oven to 300ºF (150ºC) and line a baking sheet with parchment paper.
In a mixing bowl, combine the melted coconut oil and maple syrup.
Add the cinnamon, ginger powder salt and fennel seeds.
Stir in the oats then add the almonds and Pumpkin and Sunflower seeds.
Mix well.Transfer the granola mixture to the prepared baking sheet.
Bake for 25 to 30 min, stirring halfway through, or until the oats are golden brown.
Press the oats together so they can form little clusters.
Remove from oven and add the dried cranberries and chopped dates. Mix well.
Allow the granola to cool completely on the baking sheet before transferring to an airtight container. Enjoy!
