Papaya Coconut Chia Pudding

As the weather changes its time to incorporate Chia seeds. They are a cooling agent that retains the water content in our body and keeps us hydrated, maintain agility and prevent fatigue.

Combining this with Vata reducing Papaya a low calorie juicy fruit rich in vitamin C and A. and that is rich in antioxidants. The fruit as well as other parts of the plant (such as seeds) are edible and known to have medicinal properties.

It is generally advised to avoid dairy products such as milk, cheese or yogurt with papayas as the enzyme “papain” breaks down proteins and can cause digestive discomfort.

The chia seeds and coconut milk in this recipe provide healthy fats, including polyunsaturated and monounsaturated fats. These types of fats are beneficial for heart health, as they can help to lower levels of harmful cholesterol and reduce the risk of heart disease

Ingredients

1/4 cup Chia Seeds (Soaked in half a cup of hot water overnight) Ideally

1 cup Plain Coconut Milk (from the carton)

1 tsp Vanilla Extract

1 1/2 cups Papaya (chopped)

1/2 tsp Cardamom (Or 4 pods smashed)

1 tbsp Maple Syrup (Optional)

Directions

Add the chia seeds, cardamom, coconut milk, maple syrup and vanilla extract to a bowl. Whisk well to thoroughly combine. Refrigerate for at least one hour or until the chia seeds have set.

Once the pudding is ready, mash the papaya in a bowl. Then, layer the mashed papaya and pudding into jars. Enjoy! Additional Toppings : Top with crushed walnuts and/or unsweetened shredded coconut.
